So my sourdough starter appears to be ready to go…so this weekend we will be trying to make bread. I’ll let you know how that turns out! But it’s looking good and bubbly and ready to use! I also have a lot of discard to utilize so I think I’ll be making some discard muffins and maybe some other things to use that up as well!

I found out that pretty much any recipe that calls for yeast you can replace with sourdough discard. Basically 1/2 a cup of starter is used to replace the yeast packet. Reduce the liquid and flour by 1/3 cup + 1 tablespoon and double the rise time. So I will be putting together a list of these for my kitchen to try for sure!

In addition to the sourdough starter, it’s been a whirlwind of a month. Starting a new job has been fantastic! I love working from home full time and only 32 hours a week! Blossom loves to sit behind my desk and sleep on her comfy bed. Luna likes to come sit on my lap. Oliver patrols the living room by sleeping on the couch!

We’ve had some bumps like our heat pump going out and then our emergency heat completely going out, but we’re lucky enough to have a family member who has worked in HVAC his whole life who has been able to help out. So far we’ve only paid him in eggs, but we’ll definitely be buying him a good dinner or some gift cards for sure! It’s way too cold to be without heat and our house is way too new to be having heat problems.

Thankfully we still have one more week left as I still have to get the teachers their appreciation gift this month. They’re here in the house but I have to attach the cute saying and get them in their mailboxes. That’s a project for the weekend. We’ll see what else can unravel this weekend as well!
